The main reason I am posting this recipe is because not only was it easy and good but my kids ate it and EC kept telling me how good it was. My kids are picky eaters. I try to get them to eat but it seems like every meal is a battle. When I put this on their plate they ate every bit of it without complaint. Matt and I enjoyed it too and I thought seriously about grabbing a straw and drinking the sauce. By the way it came out of a cookbook my mother-in-law gave me "Table of Grace" put out by Dawson Baptist (just in case some of you have that cookbook). Oh, and I only did half the recipe and we still had leftovers.
8 skinless, boneless chicken breasts
1 (8oz) bottle of French dressing
1 env. onion soup mix
1 (8oz - 10oz) jar apricot preserves
1 (8 oz) can crushed pineapple, undrained
Place chicken breasts in a 9x13 casserole dish. Mix remaining ingredients together and pour over chicken. Bake 1 hour at 350, basting occasionally. Serve over rice. Enjoy!!

Yum! I'm going to try it tomorrow! Don't worry about the kids' eating habits...they will improve! (Have you ever tried the ketchup method?? It works well for Ellie...just let them put a bit of ketchup on their plate so they can dip anything they don't particularly like (veggies, etc.) Of course this only works if they love ketchup! ;)
